Recipes from our Kitchen: Sausage Tortellini Soup
With so many people cooking from home, we decided to share some of the recipes from The Seeing Eye's kitchen. During normal operations, staff and students at The Seeing Eye are treated to a freshly prepared hot lunch in our dining room. Sausage and Tortellini Soup
Yield: 6 servings
Savor the rich combination of sweet Italian sausage, tomatoes, spices, and cheese tortellini in this robust lunchtime favorite.
1 lb. sweet Italian sausage, bulk or casings removed
1 large onion, diced
2 garlic cloves, diced
4 cups beef broth
1 (15 oz.) can diced tomatoes
1 (8 oz.) can tomato sauce
3 small zucchinis, diced
1 large carrot, peeled and diced
1 small green pepper, diced
1 teaspoon dried basil
1teaspoon dried oregano
1 (10 oz.) pkg. fresh or frozen cheese tortellini
Salt and pepper to taste
Freshly grated parmesan cheese for garnish
Heat a heavy stock pot over medium-high heat. Add Italian sausage and cook until browned, about 10 minutes. Remove sausage from pot and set aside on paper towel-lined plate to drain. Leave about one tablespoon of drippings in pot and cook onions and garlic until softened, about 5 minutes.
Return sausage to the pot and add beef broth, tomatoes, tomato sauce, zucchini, carrot, green pepper, basil, and oregano. Bring to a boil and reduce heat. Simmer, covered, about 40 minutes or until vegetables are tender. Stir in tortellini and cook just until tender. Season with salt and pepper. Serve topped with freshly grated parmesan cheese.
